Overnight Pumpkin Crock Pot Oatmeal

I love overnight crock pot oatmeal.  It’s a super easy way to have a hot breakfast in the morning.

Now that fall is almost here, I decided to try a pumpkin version.  It turned out great so I’m going to share it with you today!

Let me introduce you to Overnight Pumpkin Crock Pot Oatmeal.

Pumpkin Crock Pot Oatmeal

The house smells wonderful as it cooks!

By the way, *this is the crock pot I use and I absolutely love it!  It cooks meals automatically with a built-in meat thermometer, it’s big enough for roasts, and has a spill-proof lid that clamps shut.  It makes cooking so simple and it’s worth every penny!

Overnight Crock Pot Pumpkin Oatmeal

Ingredients:

1 cup steel cut oats (you must use steel cut oats because they’re the only kind that will work)
2 cups apple juice
2 and 1/2 cups milk
2 15 oz cans pumpkin
1 cup packed brown sugar
1 tsp cinnamon
2 tsp pumpkin pie spice
1/4 cup water
pinch of salt

Directions:

Step 1:  Place all the above ingredients in a ceramic bowl that will fit inside your crock pot.  Stir all the ingredients until blended.

Step 2: Place the ceramic bowl inside your crockpot.  Slowly pour some water in the crockpot until it reaches the middle of the ceramic bowl.  This will create a ‘water bath’ for your oatmeal. This prevents the oatmeal from overcooking and sticking to the sides of the bowl!  I can’t take credit for this lovely idea–it came from Mackenzie at Cheerios and Lattes.

Step 3:  Cook on low for 8-9 hours.  {Yes it takes that long to cook but it’s totally worth it!}

Quick tip: Pour a little french vanilla coffee creamer on top of your oatmeal.  This adds a creamy flavor with a touch of sweetness & it’s simply divine!

The leftovers stay well in the fridge but it will be pretty thick.  When I reheat this oatmeal, I usually “water” it down with a little milk to thin it out.

      No Lexy–you didn’t miss it! That is actually a funny story. I had great plans in my mind of sharing a strawberry version, but it failed each time! I guess I’ll just stick with Pumpkin Oatmeal 🙂

    This sounds so delicious! My kids love pumpkin bread so I’m gonna give this a try and see if they like it! I’m sure I will as it doesn’t sound like it takes near the effort to put together as a bread does:)

      One thing I love about this recipe is you can literally pour the ingredients in the crock pot and then you’re done!

      Hi Leah! This would be a great item to bring to a MOPS meeting! My crock pot is a 6 quart size. I would guess with yours being a 4 quart you’d be able to make the full amount but it will probably fill it up to the top of the crock. So I have a few suggestions:
      1) If you’re really worried about being able to make the whole recipe, you can borrow a crock pot that is bigger
      2) Mix all the ingredients together, see if it all fits in your crock pot. If not maybe you can cook the leftovers the next night.
      3) Scale back on the ingredients by 1/4 and I bet you’ll have no problem getting it to fit.

          Carrie/Kerri is a popular name! Before you put the ingredients in the crock pot, check out this post from Cheerios and Lattes. She has a method of cooking the oatmeal so it doesn’t burn on the edges. I saw her post after I wrote mine & tried it out. It works! I’ve been meaning to edit that into my post but I haven’t done it yet. So since you’re making it tonight I thought I’d let you know!

    I will have to try this. I’m a nursing mother, so I consume a lot of oatmeal to keep my supply up for my 8-month-old. I’ve never thought of adding coffee creamer to it. That’s a great idea! I will confess to adding half-and-half to my strawberry oatmeal.

    Is the brown sugar necessary since you’re already adding apple juice? I imagine it adds enough sweetness.
