Strawberry and Cream Cookies

I made a batch of Strawberry and Cream Cookies for the hubby on Valentine’s day.  This is a variation of my Orange Creamsicle Cookies recipe (which he LOVES).  I figured the pink color was a little more appropriate for V day.  This recipe only calls for 3 ingredients, so it’s frugal, easy, and delicious!

Strawberry and Cream Cookies

Ingredients:
1 box of strawberry cake mix {important note: you will not follow the directions on the box}
1 tub of Cool Whip
1 egg
1/2 to a full bag of white chocolate chips (depending on how many chips you like in your cookies)
1/2 cup powdered sugar (if desired to keep cookies from sticking together)

Directions:
Pre-heat the oven to 350 degrees
Blend the cake mix, tub of cool whip, and egg together using a mixer with a dough hook if you have one.  This is what a dough hook looks like:

There isn’t a lot of moisture in the dough so if you’re stirring by hand let me warn you it will be a CRAZY hard workout for your arms!  But don’t worry; the cookies will turn out moist at the end!

Next, fold in the white chocolate chips using a big strong spoon.

Spoon heaping teaspoons of dough onto a greased or parchment paper lined cookie sheet.  I’ve found that using a small melon baller works great at spooning out cookie dough and helps keep the cookies all the same size.
Bake at 350 degrees for 10 minutes
After the cookies are cool I dip both sides in powdered sugar so they won’t stick to each other
