My hubby is an assistant track and field coach at a local high school. So that makes me a coach’s wife. The highlight of this role is getting to see my hubby invest in the lives of young men as they learn how to train, compete, and work towards athletic goals.
The downside is some nights the track meets can keep him out until well after the kids are in bed. That means I’m doing dinnertime alone. On nights like this I tend to make easy crock pot meals.
I need lots of super easy ideas for dinner. And by super easy I mean throw a couple things in the crock pot, several hours later, viola! Dinner’s ready!

Cheesy BBQ Chicken Bacon Sandwiches from Six Sister’s Stuff. I make this recipe with pork loin on a bi-weekly basis. My hubby LOVES this and asks me to make it all the time. The leftovers are great for lunches, too!
Crock Pot Berry Pork Throw a couple ingredients in with some sweet potatoes and end up with an amazing dinner! Every time we make this we use some of the leftover meat in an omelette with american cheese and it’s AMAZING! Sometimes I look forward to the “leftovers” omelette the most!
Crock Pot Turkey Breast This turkey breast literally takes minutes to prepare but tastes like you spent all day cooking! The meat is very moist and flavorful and rivals the taste of any Thanksgiving turkey.
Ranch Pork Roast When I make this meal I add a bag of baby carrots in the crock pot during the last couple hours and it’s so delicious! It calls for a whole package of ranch seasoning but sometimes I add only a half packet and it still tastes great.
Crock Pot Chili One of our favorite ways to have a great tasting dinner with TONS of veggies! {Also a great vegetarian option} The hubby and I like to add LOTS of fresh cut up peppers, and corn. Perfect for cold nights.
Crock Pot Chicken I love this recipe because it’s very frugal. The total cost for this meal is about $6.00 so it’s good bang for your buck. (get it—chicken–buck buck:) The meat falls off the bone and tastes like a rotisserie chicken.
Slow Cooker Beef Stroganoff from Kraft. When I find some stew beef on sale I get really excited because I get to make stroagie! My hubby’s grandmother makes a KILLER beef stroagie but it’s loaded with real butter and sour cream. This recipe tastes almost as good as Grammie’s but since I can use low-fat sour cream and less butter it’s a healthier option.
