Sometimes this momma needs something sweet!
Have you ever had one of those days where nothing goes your way?
When my day isn’t going as planned, sometimes just sitting back and enjoying something sweet can be just enough to help me get in a better mood for the rest of the day {hence why I came up with Edible Cookie Dough for One and Edible Sugar Cookie Dough recipes}.
One day I was super tired after not getting much sleep the night before. Both of my kids woke up several times in the night, which means I didn’t get much sleep either. I decided to try and take a nap during my son’s naptime. Unfortunately, he decided to boycott his nap {which is happening a lot lately}.
Isn’t it funny how adults crave naps but children loathe them?
Instead of napping (to my dismay and my son’s delight) we made some Edible Peanut Butter Cookie Dough. This is a fun activity you can do with your kids while sharing a sweet treat together.
My son said “I wuv cookie dough!”
I have to agree with him. The cookie dough was so good I had to stop myself from eating it just so I could take some pictures! I was still bummed neither of us got a nap that day but at least we got to do something fun and sweet together!
By the way, if you’re looking for a mixer, this is the mixer I use & it’s awesome! It’s affordable and it stirs the thick cookie dough like a boss!
Quick disclaimer: This recipe calls for flour and some experts warn against eating raw flour. - 1 TBSP softened butter
- 3 TBSP peanut butter
- 1/2 cup packed brown sugar
- 1 TBSP milk
- 1/8 tsp vanilla
- 1/3 cup flour
- 1 pinch salt
- Using a stand mixer, combine softened butter, peanut butter and brown sugar on low for just under a minute until well blended.
- Gently stir in milk, vanilla, flour and salt with a spoon.
- Then combine the mixture with a mixer on low until incorporated.
- If you like cookie dough with a more creamy, less crunchy texture, use the mixer for a longer amount of time until desired texture is achieved.
