Mornings are often a very busy and hectic time. Rushing off to get to school, work, or life events can be so stressful, right?
I don’t know about you but I can use all the help I can get in the mornings!
Keeping an arsenal of super easy recipes is one way you can make your mornings easier. Today I’m sharing one of my favorite easy recipes.
Let me introduce you to my latest obsession: 3 Ingredient Breakfast Cookies. I’ve made these bad boys at least 8 times in the last month.
The way the sweetness of the ripe bananas pair with the creamy milk chocolate chips is really something to be savored. That may explain why every batch gets eaten in less than 24 hours!
You can’t go wrong with them because they:
- only require 3 ingredients
- are easy to make
- taste delicious
- are healthy
They’re perfect for a quick & healthy on-the-go breakfast. Heat up a couple breakfast cookies in the microwave for 10 seconds and you’ll have a healthy start to your day!
Plus they’re so delicious you won’t notice they’re healthy. That means you’ll have a great excuse to eat more than two of them. Really–how can you go wrong with bananas, oats and chocolate chips?!?
3 Ingredient Breakfast Cookies

In a big bowl, mash the bananas with a pastry blender or a fork until most of the big chunks are gone like the picture below. A pastry blender will make the mashing process go much faster!
Add oats and chocolate chips and stir. Line two cookie sheets with parchment paper so the cookies will release from the pan with no struggle! (If you don’t have parchment paper that’s okay, just grease your cookie sheets)
Next, spoon out the dough on two cookie sheets in two tablespoon increments. Using a cookie dough scoop will make this step much easier and ensure the cookies are all the same size.
Then use a big spoon to flatten the dough like this:
Bake for about 17 minutes in a 350 degree oven. While they bake, your home will be filled with an awesomely sweet aroma!
Let cool slightly before eating.

Special notes:
- Use really ripe bananas. Ripe bananas have a sweeter taste and are easier to mash up.
- Many grocery stores offer ripe bananas at a discount, which makes for a really inexpensive recipe!
- These cookies are freezable (however they usually get eaten before we have the chance to freeze them!)
- 4 large very ripe bananas
- 2 cups quick cook oats
- 1/2 cup milk chocolate chips
- Preheat your oven to 350 degrees.
- In a big bowl, mash all the bananas with a fork or pastry blender (if you have one) until most of the chunks are gone.
- Pour in oats & chocolate chips and stir together.
- Spoon dough in two tablespoon increments onto parchment paper-lined cookie sheets (if you don't have parchment paper, grease the cookie sheets)
- Next, flatten out the dough with the back side of a big spoon.
- Bake at 350 degrees for about 17 minutes.
- *These cookies taste best with milk chocolate chips, but semi sweet chocolate chips can also be used.
