One of these days I’ll have to learn my lesson.
I have a habit of putting too much on my schedule, especially during the holidays. Let’s take last week for example:
One morning I had to run an errand on one side of town to pick up our Christmas cards. Then I had to run to the complete opposite side of town to pick up my son from school, and then rush off to help decorate for our church’s Christmas party. I was ten minutes late (as I always am). Then I quickly got my son home in time for a nap so I could work from home, balance the checkbook and maybe, just maybe I’d have time to take a shower.
Now try to provide a nourishing meal for your family on top of all that craziness.
It’s not as hard as you might think!
I’ve figured out a way to make a delicious beef roast with perfectly-done vegetables, and I’m sharing all the life hacks with you! No matter how crazy your schedule gets this Christmas season, you’ll always have time to make a nourishing meal for your family.
One stop at Schnucks combined with my Easy Beef Roast recipe will have dinner on the table without a lot of effort!
I headed over to Schnucks and picked up a couple ingredients that I could easily throw in the crock pot for a great meal later that night. Getting a high-quality cut of meat and fresh delicious vegetables from Schnucks makes a big difference!
Here’s some a couple of my best Holiday Kitchen Lifehacks I’ve learned over the years:
- Cooking a big roast in the crock pot is the best way. Crock pot cooking almost always yields moist & tender meat and it’s almost fool-proof. You really can’t mess it up.
- Vegetables taste the best when they’re not overdone. No one likes mushy vegetables!
- Cut the vegetables in equal sizes for even cooking (like in the photo below) Carrots and potatoes are great to cook together when they’re cut the same size because they require about the same amount of cooking time.
- Test vegetables for doneness every couple of minutes to avoid over-cooking.
- Cooking vegetables in meat broth adds a lot of flavor without a lot of calories!
Now, let’s move on to the recipe!
Easy Beef Roast
- 2-3 pound beef round or chuck roast
- 1/2 onion, cut into large chunks
- 2 cans beef broth
- pepper, salt, onion and garlic powder (if desired)
- 2 pounds of gold potatoes, cut into one inch chunks
- 1 package fresh baby carrots, cut in half
- Cut onion in large chunks and lay in the bottom of the crock pot.
- Place beef roast on top of onions.
- Shake desired amounts of pepper, salt, onion and garlic powder on top of the meat.
- Pour both cans of beef broth into the crock pot.
- Cook on low for 6-8 hours or until meat is fully cooked.
- Turn off the crock pot.
- About 30 minutes before you're ready to eat, cut potatoes into one inch cubes and cut the carrots in half.
- Using a turkey baster, remove as much of liquid from the crock pot as you can and pour it into a large stock pot.
- Add potatoes and baby carrots to the pot and boil for about 5-10 minutes or until desired doneness. Make sure you have enough liquid to cover the veggies (you can add a little water if more liquid is needed)
