Bowl Licking Good Guacamole

The title of this post is no joke.

The first time I made this I ended up scraping the bowl with a spatula and licking every last morsel.  I would have licked the bowl clean without the spatula if it were big enough to fit my face.

How’s that for a visual?

I just couldn’t help myself.  The creaminess of the avocados mixed with the crunchiness of the red peppers and chips was to die for.  Just typing this out makes me wish I had some right now!

Ingredients:

2 ripe avocados (Here’s how you know if an avocado is ripe)
1/2 onion, chopped
1 tsp minced garlic
1/2 cup chopped red peppers
1/2 tsp salt
2 tsp mayo

Directions:

Mash up the avocados with a pastry blender.  In case you’re wondering, this is what a pastry blender looks like:

Mash up the avocado until the texture looks something like this:

Gently stir in the rest of the ingredients, then serve with fresh chips.

This guacamole pairs really well with my recipe for Spanish Rice (click here to see that recipe)

I hope you enjoy this recipe as much as I do!
