Crock Pot Oatmeal

I originally saw a recipe for overnight crockpot oatmeal at Turnips 2 Tangerines.  She made a great version with cut up apples in it & it was delicious.

There’s only one problem.  I’m a lazy cook.

I wanted to make an easier version (with no apple cutting) and still get a good result.

I made the recipe a couple more times, tweaking a couple ingredients.  The result is this: Homemade Overnight Apple Cinnamon Crock Pot Oatmeal.

Here’s how to make it:

Overnight Apple Cinnamon Crock Pot Oatmeal

1 cup steel cut oats (you must use steel cut oats because they’re the only kind that will work)
2 cups apple juice
2 cups milk
1/2 cup applesauce
1/2 cup packed brown sugar
1 tsp cinnamon
1/4 cup water
pinch of salt

Directions:

Step 1: Coat your crock pot with some non stick spray or butter.

Step 2: Place all the above ingredients in the pot and then stir.

Step 3: Cook on low for 8-9 hours.  {Yes it takes that long to cook but it’s totally worth it!}

If you happen to be up in the night, give the ingredients a quick little stir.  In the morning some of the edges of the oatmeal that have been against the pot all night get a little crispy. I like the added “texture” but if you don’t like it you can remove it.

Quick tip: Pour a little french vanilla coffee creamer on top of your oatmeal.  This adds a creamy flavor with a touch of sweetness & it’s simply divine!

By the way, *this is the crock pot I use and I absolutely love it!  It cooks meals automatically with a built-in meat thermometer, it’s big enough for roasts, and has a spill-proof lid that clamps shut.  It makes cooking so simple and it’s worth every penny!
