Summertime brings great grilling opportunities. A couple years ago my hubby created this fantastic way to grill chicken with a not-so-secret ingredient.
Bacon.
You can’t go wrong with bacon, right?
We love to grill chicken since it’s so easy and it’s a great excuse to get outside. The problem is grilling often gives chicken a rubbery texture because it dries out so easily. This method solves that problem. The bacon seals in the moisture as it’s grilled so it turns out moist and heavenly. The hubby and I make this meal often because it’s so easy and delicious!
So….on to the recipe!
Bacon Grilled Chicken
Step 1: Make the dry rub. We usually throw this rub together so can vary the ingredients to your taste. Here’s a suggestion of what to use:
- 3 tsp seasoned salt
- 2 tsp onion powder
- 1 tsp each of garlic powder, cumin, paprika, and chili powder
Step 2: Prepare the chicken by cutting off any extra fat. Sprinkle desired amount of dry rub all over the chicken. This is about how much we put on ours:
Step 3: Take one slice of uncooked bacon and wrap around the chicken breast until it’s covered using toothpicks to hold it on. If one slice won’t cover all the chicken, go ahead and use two slices of bacon.

Step 4: Grill chicken until fully cooked (until internal temperature reaches 165 degrees)

Step 5: Take toothpicks out, serve & enjoy!
