Yesterday the hubby and I were about to eat dinner.
And by dinner I mean a take-out pizza. Don’t judge me.
Sometimes we try to eat a vegetable before eating the pizza in hopes of being healthier. I know we’re just kidding ourselves, but hey–every veggie counts, right?
So as the hubby is rinsing the lettuce I searched the fridge for some dressing. Hubby has his usual Italian dressing (which I don’t like). Now that I’m actually craving a salad, I realize there’s no berry dressing for me.
UGH.
Necessity is the mother of invention. How true this saying is. I wanted a salad desperately enough I thought of a solution. I decided to try and make my own berry dressing and it turned out really great! Plus it’s a lot less expensive!
This recipe makes enough for 1-2 salads depending on how much dressing you like. Why such a small amount? I like to make a little batch at a time–that’s just me. Feel free to double or triple the recipe if you want more.
Berry Dressing
2 Tbsp jelly (any berry flavor will work)
1 tsp. Dijon mustard
1 Tbsp water
Mix all three ingredients in a small container with a whisk until smooth. This is what it will look like after being mixed:
Then taste a little bit and see how you like it. If you want a little more “punch” to it, add a couple drops of Dijon mustard. If you’re like me and like it more on the sweet side, add a tsp of sugar.
Pour on your favorite salad and enjoy!

I like my salads sweet with a little crunch and a bit of salt. For this salad I used Ritz crackers, raisins, and the Berry Vinaigrette Dressing. I love the sweet and salty combination. What do you like on your salads?
